TASTING NOTES:

Magnificent mahogany robe. Aromas of walnut, fig, and date meld with notes of dark tobacco. The finish lingers with a striking bitterness of orange peel—long, persistent, and memorable. A great Maury, marked by rustic freshness and remarkable depth.

FOOD PAIRINGS:

This wine, with its bright, age-defying freshness, pairs beautifully with Pata Negra, blue cheeses like Roquefort, or simply savoured on its own for the pleasure of the journey. Open one hour before serving at 15°C.

TERROIR VINE MANAGeMENT :

South-facing slopes of decomposed schist and black marl. Soils are regularly tilled. Goblet-trained vines over 40 years old. Average yield: 18 hl/ha. Planting density: 3,500–4,000 vines/ha.

GRAPE HARVEST :

Manual harvest. Double sorting and destemming.

WINEMAKING:

Extra alcohol is added during the fermentation while the wine is still on the skins (mutage sur grains), and then the whole is allowed to macerate for 30 days to extract the aromas and polyphenols from the grapes, ensuring a nice balance of fruit, alcohol and sugar.

MATURATION AND BOTTLING :

One year in glass demijohns outdoors under the sun, followed by ageing in old 350-hl oak casks for at least 40 years. This exceptionally long ageing, a true Mas Amiel signature, allows the wine to develop profound aromatic maturity and structural depth.

The difficulty with writing about a wine like this is that it's so complex, there is so much there, the flavours and aromas keep emerging, whirling, whorling, rising and falling, that the tasting note either becomes a shopping list of flavours or a metaphor to snapshot capture the essence of the wine. I'll give you the shopping list, although it's more like a kaleidoscope in the mouth: cherry, cigar, ginger snaps, smoked pecans, marmalade, marmelo. Quince and candied peel. Dried apricots. Incredible texture, scrunched silk and tissue paper on stone. Masses of souk spices and pomegranate and oh my god this just goes on and on and on. No end in sight… And I'll give you the metaphor: watch an African sunrise. Even if it's on YouTube. But if you've ever actually sat on a rock, just before dawn – the smell of last-night's heat and campfire, today's cold-dawn dust and acacia trees held still in the milk-blue pause before the light breaks the horizon – you will know exactly what this wine is like.

The latest release of the NV Maury 40 Ans features high-toned, walnut-like aromas and notes of maple syrup. Yet it's surprisingly drinkable, being only medium to full-bodied, with moderate sugar levels and hints of mocha and ripe citrus on the long, long finish.

Our oxidative Vins Doux Naturels, made from old-vine Grenache grapes fortified while still on the skins, spend one full year under the open sky in glass demijohns, exposed to the Roussillon sun and its dramatic temperature shifts, before continuing their slow, decades-long evolution in century-old casks.

PARCELS, GRAPE VARIETIES & TERROIR

90% Grenache Noir, 5% Maccabeu, 5% Carignan

The soils, composed of weathered schist and black marl, benefit from a full south-facing exposure that ensures optimal ripening of the grapes. Vineyard management prioritises traditional ploughing to preserve living soils and encourage deep root systems. The old-vine Grenache, over forty years of age and trained in the traditional goblet bush form, delivers naturally low yields of around 18 hl/ha, with a planting density of 3,500 to 4,000 vines per hectare.
